Culinary traditions of Auvergne: discover bourriols

For sweet-toothed food lovers, February is also the month of Candlemas, celebrated on 2 February, when sweet and savoury crêpes are enjoyed in abundance. But do you know about bourriols? It is a crêpe originally from Cantal. In the countryside in the past, the bourriol replaced bread and was often eaten filled, such as the bourriol with potatoes and melted Saint-Nectaire cheese. Yum, a real treat!

An authentic recipe to try at home

Ingredients:

150 g of plain white flour
100 g of buckwheat flour
15 g of baker's yeast
25 cl of milk
250 ml of water

Mix 25 cl of water with 25 cl of milk. However, the traditional recipe is made with whey.

Preparation:

Mix the yeast with a little warm milk and leave to rest for 15 minutes.

Mix the flours, add a pinch of salt, then stir in the dissolved yeast.

Gradually add the 50 cl of liquid (milk + water), mixing to obtain a smooth but slightly thick batter.

Leave to rest for 3 hours (minimum time).

Then pour a ladleful of batter into a frying pan, just like for pancakes.

Flip over when the batter is dry on top in order to brown the other side.
